Apple Chutney
The apple trees are loaded. The pony gets the ones that fall on the ground and get picked over by the bugs and birds, so she's pretty happy about that. Decided to 'get my cook on' and make some into chutney today. This one has dried cranberries and blueberries in it for some extra fruity flavor. I adapted it from a Nigella Lawson recipe:
4 cooking apples, peeled and chopped
150g dried cranberries
100g dried blueberries
1 red onion, diced
100ml apple cider vinegar
250ml white vinegar
200g raw sugar
1tsp ground ginger
1 tsp turmeric
1 tsp ground cumin
1 tsp ground coriander
1 tsp salt
Boil all ingredients together until apple softens and it becomes thick. Took approx 30 mins. Bottle.
Blueberry Planting
The Pick-Your-Own blueberry farm that we frequent has closed for the season so I picked up 4 of their half-price shrubs to plant at home. These are 2yr old seedlings, chosen for their frost hardiness as we get some good ones in winter and spring. There is one Bluecrop, one Jersey, and two Dixie varieties so they will hopefully fruit at different times, making for a longer season of blueberries. I'm not sure they will keep up with the kids...but there's always room for more next year!
